How it works

We bring restaurant-grade Australian Wagyu into Emerald by the whole primal, once a month. A Beef Cartel cycle runs the same way every time, and you know the rate per kilo before you reserve anything.

  1. 01

    The cycle opens

    We put the catalogue up for the month: every cut we have this cycle, each in MSA 6/7, MSA 8/9 and MSA 9+, every one priced per kilo. Every box is 12 to 15 kg of whole primals. How many that is depends on the cut: two or three of a bigger one, about six of a rump cap.

    You choose your cuts and reserve them with a 30 per cent deposit. That deposit holds your box for the cycle at the rate on the page. We email you a confirmation carrying the cut, the grade and the rate you reserved at.

  2. 02

    The cycle closes and we buy

    Every box reserved that month goes to our supplier as one order. That is what puts these cuts at this price.

    Your box is held at the rate you reserved at. From here the order is ours to move, and the next thing you need from us is an email.

  3. 03

    Your box travels refrigerated to Emerald

    The consolidated order comes down the line under refrigeration and into our cold room in Emerald. Freight timing moves from cycle to cycle, so we go by the box itself: the day yours reaches the cold room, you hear from us.

  4. 04

    Your box arrives, and we send you the figures

    A box reaches us sealed, with the weight the abattoir recorded printed on the outside. We do not open it, and that printed figure is the one we are charged on and the one we charge you on. A single primal is different: we have to open the case to get it out, so we weigh it ourselves on the scales in our cold room.

    Either way you get an email with the weight, the rate, the final price and the balance left to pay. Every figure sits on the one page, so the arithmetic is there to check before you come in.

  5. 05

    You collect, and you pay the balance

    Collect from our cold room in Emerald. Reply to that email with a time that suits, and your box will be ready when you arrive.

    The balance is taken when you collect, at the rate you reserved at, against the weight of what you are taking home. If you bought a single primal you can ask us to weigh it in front of you before you pay. Nothing is charged to your card between reserving and collecting.

    Everything leaves the cold room at temperature. Bring an esky if you have distance to cover.

What you pay, and when

Every cut is priced per kilo, so the weight of your box sets the price of your box.

Thirty per cent holds it for the cycle. You pay the balance when you collect, at the same rate per kilo you reserved at. A box estimated at 12 to 15 kg that comes in at 14.2 kg is charged for 14.2 kg.

Every cut has a weight range and it is on that cut's page. Come in above the top of it and we charge you for the top of the range, so that is the most you can ever pay for one. Come in under the bottom and you choose whether to take it or cancel it.
