Collection and cycles
A Beef Cartel cycle runs for a month. We open it, take reservations against a 50 per cent deposit, close it, and bring every box reserved in it into Emerald together. This page follows one cycle, from the day it opens to the day you collect.
The cycle opens
This month's cuts go up with their grades and a price per kilo against each one. A box is a whole carton of one cut, and each cut's page shows what it weighs. Choose your cut, reserve it with a 50 per cent deposit, and it is held for you for the rest of the cycle.
The cycle closes
When a cycle closes, every box reserved in it goes to our supplier as one consolidated order. That is what puts these cuts at this price.
Between closing and collection
From there your box moves through four stages, and we show you the one it is at.
With our supplier. The order is placed and your cut is being filled.
On its way to Emerald. Your box is travelling refrigerated.
Arrived. It's in our cold room, weighed and priced. Your invoice for the balance comes by email and text, at or before collection.
Ready to collect. Come and get it. Pay the balance on your invoice by the time you collect, by card or bank transfer. It's the rate you reserved at, against the weight on your box.
Your box travels on the first freight run into Emerald after the order is filled. Freight timing moves from cycle to cycle, so we go by the box itself and move the stage along as it happens.
How you know your box is ready
We email you the day your box is in our cold room and ready. It has the collection address and how to reach Laine to set a time. Your invoice for the balance follows: the weight your box came in at, at the rate you reserved at, less your deposit.
Collecting
Collect from our cold room in Emerald, QLD. Reply to that email with a time that suits and your box will be ready when you arrive.
Everything leaves the cold room at temperature. Bring an esky if you have distance to cover. Vacuum sealed, a primal cut holds in the freezer for months.

Every cycle carries its own cuts and grades. The cycle is open, and fifty per cent holds your box for it.
