# Beef Cartel > Premium Australian Wagyu sold by the whole primal, reserved on a monthly cycle > and collected in person from a cold room in Emerald, Queensland. Beef Cartel sells whole primal boxes of Wagyu, not retail steaks. A box is one whole cut, 12 to 15 kg, in one of three marble grades. You reserve a box with a 30 per cent deposit while the cycle is open; the balance is charged on the weighed weight of your actual box once it arrives, at the rate you reserved at. ## How it works - **Cycles.** A cycle runs for about a month. It opens, takes reservations, closes, and every box in it is ordered together. That consolidation is what sets the price. - **Deposit, then balance.** 30 per cent up front. The rest is charged after your box is weighed, so you pay for the box you actually get rather than an estimate. - **Stages, not dates.** Between closing and collection a box moves through four stages and the site shows the one it is at. Timings shift cycle to cycle, so Beef Cartel deliberately does not promise a date. - **Pickup only.** Collection is from the cold room in Emerald QLD. There is no delivery to customers and no delivery address is collected. ## The cuts The range changes cycle to cycle.
